Gelato的製作完全遵循自然原則，所有選料均為時令水果。因此，Gelato帶給你綿延鬆軟，層次鮮明的味覺新享受。而Gelato更是義大利女性的最愛，因其低脂、低糖、低熱的優點。
普通雪糕含至少10%的脂肪，而Gelato使用全脂牛奶的成份比忌廉還少，約含5%至7%的脂肪。製造Gelato的速度比一般雪糕慢，所以打入雪糕的空氣會較少，因此Gelato的味道比一般普通雪糕更濃厚。
Gelato只含25%至30%的空氣，而一般普通的雪糕空氣含量則達50%。由於Gelato的脂肪比例不高，那獨特的口感與一般普通的雪糕有點不同，Gelato的味道更為濃郁。
