0°C 至 5°C 之間。Iberico ham 顧名思義就是在西班牙裡伊比利亞半島區域所出產的，是現時西班牙西南邊鄰近葡萄牙一帶。能夠稱為 Iberico ham，必須是以生長於法定產區的伊比利亞豬的腿製成的火腿。Iberico 豬特徵是黑蹄、黑腳、黑毛、長鼻、垂耳，外型黑色，所以又稱為黑毛豬，脂肪分布均勻，是極優異的豬種，而質素的高低就主要以品種的純正度和飼養方式分級。
