作為全球最大的牛肉出產國，美國農業部（USDA）對牛肉的分級是非常嚴格和細緻的。
美國牛肉分級：
美國牛肉的質量級依據牛肉的品質（以大理石紋為代表）和生理成熟度（年齡）分為：極佳（Prime）、優選（Choice）、可選（Select） 、合格（Standard）、商用（Commercial）、可用（Utility）、切塊（Cutter） 和制罐 （Canner）一共8個級別。
也就是說，牛的年齡越小、牛肉的油花量越多（大理石花紋越細密），對應的等級也越高。
PRIME極品牛扒是油花最豐富，分佈最均勻，肉質最好的級數
1. 美國牛扒主要分為三個級別，而PRIME只佔了這三個級別的 2%
2. 以玉米、黃豆、大麥和小麥等為飼料
3. 建議煮食熟度: 3至5成
*** 小知識：由於牛肉以真空包裝，在-18C冷凍時有機會因缺氧而顏色變成暗紅色甚至黑紅色，將牛肉解凍後放置於室溫下一段時間，牛肉與空氣有充分接觸後，就會變回較為鮮紅的顏色，請安心食用。***
